Thanks for the response.
My WiFi has been working trouble free for many years on the existing equipment.
Although nothing has changed recently, I started having the issue.
As a result, I started deep diving into the WiFi settings and changing and testing every different setup / channel with the same results (constant dropping of the WiFi).
